方一:
1 cup water
1/2 cup butterpinch salt
1 cup all-purpose flour
4 large eggs
whipped cream or ice cream, for serving
chocolate sauce, for dousing
Preheat the oven to 400F.
In a medium saucepan, bring the water, butter and salt to a boil; remove from heat and stir in the flour, stirring vigorously until the dough comes together and cleans the side of the pan.
Transfer to a bowl and beat in the eggs one at a time, mixing well after each addition. Set aside for about 10 minutes and then drop spoonfuls of batter onto a parchment-lined baking sheet; bake for 20-30 minutes (depending on the size of the spoonfuls) until puffed and golden. Immediately poke a hole in the side of each one with the tip of a sharp knife or a bamboo skewer. inks_tag">Cool completely before filling.
Makes 1-2 dozen cream puffs.
方二:
材料: 一杯全脂牛奶(我用的是2%的有机牛奶),一杯面粉 (我用的 King Author all purpose), 三个大鸡蛋,1/4 teaspoon的盐(我用的更少些),2 table spoon butter.
做法:把黄油放在小锅里化开。用刷子往每一个摸杯里面刷上薄薄的一层黄油。把鸡蛋打散,倒入牛奶,一table spoon化开的黄油,大出泡泡。我没有用机器,就是用筷子一个方向打。面粉是筛了一下一点点拌到打好的鸡蛋牛奶液中。用一个方向把面粉拌匀。书上说Don't over mix it. 不要过于搅拌。
不预热烤箱。把烤盘放入冷烤箱后,设置375度开烤。注意一定不要中途打开烤箱,否则就起不来。时间看食物大小而定。
我自己的方子:
1 cup water,
60 g 油
1 cup flour
4 eggs
1/2 tsp salt
1 tsp sugar
做法:
1, 油,盐, 糖,水,加到小锅里煮开。
2,开到小火,一次性倒入面粉,快速搅拌,成团,不沾锅后,离火。
3,凉到不烫手,加鸡蛋,每次加一个,拌匀,直到,鸡蛋都加入。
4,烤箱预热400 F, 烤10到15分钟(18分钟),等puff 完全膨胀后,降温至375,烤20 到30分钟。没烤好之前,中间不能开烤箱。
